- 6 lamb shanks
- 2 tbs olive oil
- 2 onions, chopped
- 3 carrots, cut into ¼ inch rounds
- 12 garlic cloves, minced
- 2 cups red wine
- 4 tomatoes, diced
- 2 tbs cream base
- 4 tsp fresh rosemary
- 2 tsp fresh thyme
- Preheat the oven to 350 degrees.
- Season the lamb shanks with salt and pepper and place in an oven-safe baking dish. Bake in the oven for 30 minutes.
- Transfer the lamb shanks to a large pot and add in all the ingredients.
- Cover the pot and cook on medium-low heat for two to three hours.
