Sizzlin’ Stuffed Pepper Soup

For the month of June, our Executive Chef Paul Forchione is sharing another excellent featured recipe that our assisted living residents love. In honor of Father’s Day, this month’s featured recipe is something that is a favorite among dads. This recipe puts a fun spin on the classic stuffed pepper – now it’s a soup! Stuffed Pepper Soup combines all the delicious ingredients of stuffed peppers into an easy-to-make soup perfect for any weeknight dinner.

Ingredients:

  • 1 lb. Ground Beef
  • 1 large Onion
  • 1 cup Rice
  • 1 can Diced Tomatoes
  • 1 can Tomato Sauce
  • 1 teaspoon Oregano
  • 1 teaspoon Basil
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 6 tablespoons Chicken Base
  • 2 tablespoons Beef Base
  • 1 large Green Pepper
  • 4-5 Red Peppers
  • 4-5 Yellow Peppers
  • 3 quartz Water
  • 2 cups Shredded Cheese (of your choice)

Directions:

  1. In a large skillet, brown the ground beef along with the rice, garlic, and onion.
  2. Add diced tomatoes, tomato sauce, salt, pepper, oregano, basil, chicken base, beef base, 3 quarts of water, and peppers.
  3. Bring mixture to a boil, then reduce heat. Cook covered for 20 to 30 minutes.
  4. Serve with cheese on top (optional).
